Short answer: Airlines follow incredibly strict, proactive global laws.
Aircraft mechanics are highly licensed professionals. Planes are heavily regulated by agencies like the FAA and EASA. Parts are tracked by advanced computers and are thrown away and replaced long before they ever get a chance to break. Even if a plane is older, it has been rebuilt so many times that it is essentially brand new on the inside.
